Hermitage
The history of Domaine du Colombier goes back to 1929, the year when the Viale family planted the first vines around the Hermitage hill. The sympathetic Florent Viale is the third generation of the renowned domain. He took over in the early nineties and decided to stop selling the grapes from the best vineyards, but to bottle them as wine himself.
Since then he has been internationally renowned with his striking, elegant crozes hermitage. Together with his brother, he also owns no less than two hectares of vineyards in the famous Hermitage appellation, from which a white and red wine are made. Here, too, the Colombier style, like the crozes hermitage, is characterized by a high degree of flexibility and refinement
While two hectares may seem small, many fellow winemakers will envy this grand property in arguably France's finest vineyard. Colombiers plots with more than 50 years old syrah canes are also located in Beaumes, one of the best climats on Hermitage Hill.
Florent Viale harvests the grapes as ripe as possible for a high taste concentration and intense, smooth tannin structure. After the harvest, the syrah grapes partly ferment in concrete, stainless steel and oak cuves. After this, he ripens the wine for about eight months in concrete tanks and demi-muids (oak barrels of 600 liters). The result is a red hermitage with beautifully ripe fruit and complex, mouth-filling taste, which rivals the top wines from this famous wine region. At its best after at least ten years of aging in the bottle. When drunk young, it is recommended to aerate the wine in a carafe for two hours before serving in large glasses.
