Bright red in color and spicy in scent, with fresh red fruits such as cherries and raspberries. The taste structure is juicy and fresh and ends with an aromatic aftertaste.
Burgundy Pinot Noir
François Raquillet cultivates about 10 hectares of provenance in Mercurey, part of the Côte Chalonnaise in southern Burgundy. It is a bit warmer there than in the well-known and more northerly crus in the Côte de Beaune. You can taste that in the wines of what many consider to be the best domaine in the region. In addition to a wonderful purity, the taste is seductive and round. As in the red 'vieilles vignes' made from 60 year old pinot noir vines that give a low yield and are planted on a small 15 hectare plot. After the two fermentations, the wine matures for 12 months in small oak barrels. François deliberately does not use new barrels to limit the wood influence, but barrels that have already served between 1 and 3 harvests. Pure refinement.
