Haute Vallée
The Limoux is not only known for its production of quality sparkling wines, but also for its excellent red and white wine. Les Bénédictins Limoux rouge is composed of a balanced selection of Merlot, Syrah, Grenache and Cabernet grapes. The region is suitable for these varieties. Although the region is located quite south (south of Carcassonne), the average temperature in the high-altitude vineyards is much lower than in the rest of the Languedoc. This causes the grapes to ripen more slowly and evenly. The result is a wine with complex aromas and a perfect taste balance. After fermentation, this wine matured for approximately 12 months in small oak barrels.
