Description
Pago de la Jaraba is made from hand-picked Tempranillo (70%), Cabernet Sauvignon (20%) and Merlot grapes. During and after the harvest, the grapes for this top wine are selected and then fermented in large 5,000-litre oak barrels. This is followed by a second fermentation and ten months of maturation in small, new oak barrels from the best French cooperages such as Radoux and Seguin Moreau. Winemaker Pedro del Toro bottles his finest wine unfiltered. This method and the choice of only the best grapes and oak barrels is the recipe for making top quality. You can taste that in this distinctive La Mancha with its complex, refined aromas and a beautiful, long-lasting taste with tension.
