Beautiful dry white wine with the characteristic aroma of fresh boxwood tones, citrus and beautiful toast aromas. The taste is dry and fresh in structure and ends with a fragrant and lingering aftertaste.

Description

The Spanish Castelo de Medina is known as a producer of modern fresh white wines with an expressive aroma and taste. Top notch features of good quality rueda. Winemaker Sara Román was given the green light a few years ago to make two wines that transcend the level of 'regular' rueda. We previously introduced the verdejo vendimia seleccionada best Spanish white wine at the Mundus Vini competition in 2014. The impressive sauvignon vendimia seleccionada is now available. For this wine Sara selected the oldest vineyards with Sauvignon grapes and drastically limited the yield. She did this through strict pruning and a green harvest of up to 30% of the permitted amount for rueda. During the harvest she also made a selection of the most ripe and healthy grapes.

After picking and temperature-controlled fermentation, a maturation of about eight months followed on yeast cells. This originally French wine technique ('sur lie') is now used worldwide and provides more complexity and taste. Maturation on yeast only has a positive effect if the harvested grapes are in perfect condition, i.e. optimally ripe and without fungi. Hence the strict selections in the vineyard. And you can clearly taste that in this special dry white sauvignon: lots of taste, refinement and length. This wine can even mature for several years in the bottle. Highly recommended.
