Beautiful Gourmet Riesling
Beautiful German dry white wine with a subtle aroma of citrus, light herbs and flowers. The taste is elegant and fresh-dry. Pairs well with fish dishes, asparagus or poultry.
Of course Riesling was fermented
Organic pioneer Clemens Busch makes very distinctive Riesling in the Moselle with a strong terroir expression. The technical human intervention in the cellar is subordinate to the style of the wine. The natural yeast from the vineyard largely determines how the wine smells and tastes and therefore causes differences per plot and barrel.
Clemens lets nature do its work. It is therefore common for fermentation to proceed slowly and take a long time, sometimes eight to ten months. A length of time that modern winemakers consider very extreme and even irresponsible! The assembly then gives great complexity and requires maturation in the bottle.
Such as this delicately scented, fresh-dry Riesling 'Vom Roten Schiefer', the grapes of which come from vineyards with red slate. Despite the modest alcohol content, this wine has a powerful and long, persistent aftertaste. This is only possible with the very low yield per vine that is common with Clemens Busch. Beautiful, gourmet wine.
