Portugal at its best
The grapes for this white dão come from the Silgueiros region, with a strong granite soil. Winemaker Carlos Silva chooses a high proportion of the encruzado grape with 60%; according to Silva the 'queen' of the grapes in the Dão area. He supplements this with malvazia, bical and cerceal branco. They are harvested and fermented around the second and third week of September. As a modern winemaker, he almost naturally opts for cool fermentation and no oak maturation, so that the grape aromas are well preserved. The result: a characterful, fresh wine with the unique properties of unknown, indigenous grapes. A special combination.
