The organic planting and the ambition to make top quality force Marco to low yields so that the native grapes have a beautiful expression. The Nerello Mascalese and Cappuccio grapes are only harvested in October on the volcanic vineyards located between 600 and 900 meters high. After fermentation at low temperature, a short aging in tanks follows and bottling follows. The absence of oak maturation contributes to the wonderful fruit expression of the nerello.
