Tasting note Cap Saint Martin White

French white wine with a refreshing aroma of citrus green apple and fine yellow fruit. The taste is juicy and dry. Excellent aperitif but also very suitable with cold fish or meat dishes.

Description

Pierre and Béatrice Ardoin mainly make (excellent) red wines from their 20 hectares of vineyard. However, a small piece of less than a hectare has been planted with Sauvignon Blanc grapes since 2008. Production is very limited at approximately 3,800 bottles per year and this fresh, dry white wine is therefore hardly found outside the region. Although Pierre and Béatrice do not have much experience in making white wine, they do have the knowledge as a certified oenologist. The wine is therefore of impeccable quality. The vinification is modern with cold soaking of the skins and fermentation at low temperature. After this, the wine matures for another 4 months 'sur lie' (on the lees). This gives a full, juicy nuance to the taste.
