Description
Gaia Estate is the special wine estate with production in Nemea and Santorini of two progressive Greeks Yiannis Paraskevopoulos and Leon Karatsalos. The high-quality technical input comes from Yiannis, who graduated from the Bordeaux Wine University. Together with agricultural engineer Leon, he belongs to the group of best wine producers in Greece.
The Assyrtiko of the island of Santorini is something special. The very old vines are located adjacent to the sea in a volcanic soil and are protected from the strong sea wind by the winding trunk. Gaia uses exclusively wild yeast cells for fermentation. After a cool start to fermentation, the wine is allowed to ferment in a traditional manner and at a higher temperature.
