Description
As befits a true Bourguignon, Laurent Delaunay also focuses on suppleness and drinkability in the southern French Languedoc. Take this wonderfully fruity, full-bodied, yet supple Cabernet.
Laurent harvests some of his grapes in the foothills of the Cévennes and some in the Aude. Under the southern French sun, the Cabernet Sauvignon ripens perfectly. By selecting relatively cool vineyards, Laurent also ensures sufficient freshness in the grapes. Finally, the low yields he uses result in a high level of flavor concentration.
Once in the cellar, Laurent destems the grapes. He allows the skins to macerate for a considerable time before fermenting the juice. After fermentation, he ages a small portion of the wine in oak barrels, the vast majority in stainless steel tanks.
This results in a wonderfully full-bodied, smooth red wine that immediately seduces with its pure fruit flavors of blueberry, plum, and blackberry, along with a hint of toast. This Cabernet is smooth enough to enjoy solo, but is also a perfect companion for everyday meals.
