Beautiful wine from Mont Ventoux

The vineyards at the foot of Mont Ventoux benefit from a special phenomenon. Especially at night, it is considerably cooler at the top of Mont Ventoux than in the valley and this cold air 'falls' on the vineyards lower on the hills.

This ensures a slower and longer ripening time of the grapes. It seems paradoxical, but in a warm climate - such as in Ventoux - slower ripening is extremely beneficial for maintaining freshness and aromatic power in the grapes.

The relative coolness preserves fruity aromas and prevents the wine from developing an overripe, overly candied aroma later. The acidity, necessary for a balanced taste, is also better maintained under cooler conditions.

You can taste this in the wines of the small Bon Remède, which combine aromas of fresh fruit with a full, ripe taste and a pleasant freshness.
