Deep red wine with ripe red fruit, blackberries and candied nuances in the aroma. The taste is full, round and soft and develops well-balanced with a long, aromatic aftertaste.
Montepulciano d'Abruzzo
Appassimento is the Italian term for the process of drying grapes used to make highly concentrated or sweet wines. Appassimento wines are especially famous for wines like Amarone and Ripasso, but the method is used all over the country.
Our organic Abruzzo domain Collefrisio has recently also made an impressive Appassimento. The wine is mainly obtained from montepulciano, the blue grape of the region, supplemented with some sangiovese and merlot.
The grapes are harvested later, so that they already dry slightly on the stick. Once picked, the skins stay with the wine longer during fermentation for extra color and flavor intensity. To round off, the wine matures in stainless steel tanks.
Just like an Amarone, this Appassimento is also very ripe, powerful and concentrated. Drink it with hearty dishes such as game or stews, or just by the fire on cold winter evenings.
