Description
Bouard-Bonnefoy is not just a wine estate. This tiny, artisanal family winery in Chassagne-Montrachet can call itself the proud purveyor of none other than absolute elite winemaker Pierre-Yves Colin Morey. That says something about the quality of the grapes of this house!
From a small part of their proceeds, Fabrice and his daughter Clara (who incidentally also did an internship at Pierre-Yves) make a modest amount of their own wines. Chassagne is their specialty, with this 'entry level' serving as a delicious business card.
The chardonnay grapes come from several of our own plots in Chassagne-Montrachet, from younger plantings to about 20 years old. After manual harvesting and pressing with the old wooden vertical press, fermentation and maturation take place in oak barrels. The wine matures for a year in barrels, 20% of the casks are new.
The result is a pure, refined Chassagne. The scent is complex, with notes of yellow fruit, toast and a hint of honey. The taste is ripe and fruity, with a nice balance between a creamy texture and lively freshness. A classic with fish in butter or creamy Burgundy cheeses.
Drink at
Beautiful, luxurious, dry white wine to combine with refined dishes, such as risotto with langoustine, grilled sole with butter and mushrooms, or quail from the oven.
Tasting note
Complex white wine with nuances of yellow apple, melon, pineapple, toast, burnt butter and dill. Powerful, full and intense fruity taste with stimulating acidity and a creamy texture. The finale is long with hazelnut and fine bitters.
