Description
The undisputed specialty of Bouard-Bonnefoy is Chassagne-Montrachet. This is where the winery is located and the Bouard family owns most of the vineyards. However, the Bouards also own some plots in neighboring Saint-Aubin. And the wines they make here are truly unparalleled!
Take, for example, this premier cru Les Combes. The grapes for this beautiful white Burgundy come from the vineyard of the same name not far from Chassagne-Montrachet. Special is the relatively high location and the eastern exposure. It gives grapes with fresh acidity, which in turn creates tension and finesse in the wine. The rocky, chalky soils also give it a distinctly mineral character.
Fabrice Bouard harvests the grapes by hand. In the cellar, he also presses the chardonnay manually, in his antique vertical wooden press. He transfers the must to mostly used oak barrels. Here the wine ferments with yeasts present on the grape. The Saint-Aubin then matures for another year on the fine yeasts.
The Les Combes is a beautiful, classic Saint-Aubin: energetic, with beautiful tension and exceptional refinement. Drink it in its youth after aeration in a carafe or after several years of bottle aging. A wonderful accompaniment to, for example, fish fried in butter, chicken with lemon or a creamy veal dish.
