Description
If anyone knows how to capture the essence of red Loire, it is Bertrand Sourdais, owner and winemaker of the 1889 Chinon icon Domaine de Pallus. He proves it once again with this new cuvée: Cabernet Franc in the purest sense of the word.
Bertrand harvests the biodynamically grown grapes from his younger vines, planted on sandy and chalky hills. After a short maceration on the skins, fermentation follows with the help of natural yeasts present on the grape. Finally, Bertrand matures the wine for six months in used oak barrels.
The result is an exemplary Loire Cabernet of the type that is particularly popular in the brasseries and bistros of Paris. What a deliciously juicy, elegant Chinon, with notes of red fruit, laurel and a hint of cedar. The perfect wine to serve with steak frites or duck breast.
