Long description
Domaine de Panisse is the recently purchased winery of Marilou and Axel Vacheron, 4th generation winemakers of the famous Châteauneuf-du-Pape domaine Clos de Caillou. The enormous experience of Caillou's winemaker, Bruno Gaspard, is in their baggage, but Marilou and Axel see it as a challenge to put their own stamp on this small, beautiful winery located less than a kilometer from Caillou. The planted Grenache, Syrah, Mourvèdre and Cinsaut grapes are organically grown and harvested with a very low yield in the vineyard, so that the wines have maximum terroir expression. For the Châteauneuf-du-Pape, for example, this is only 25 hectoliters per hectare. The grapes are harvested by hand after selection in the vineyard and selected again upon arrival in the cellar. After complete destemming, spontaneous fermentation follows in concrete barrels and then the wine matures for 14 months in 500 liter and smaller 225 liter barrels made of French oak. The result is a concentrated top wine with refinement and a beautiful length of taste.
Drink with
Ripe, spicy red wine to drink with various stew or grilled dishes, such as brisket with savory and sauerkraut, lamb chops with braised eggplant or ratatouille.
Tasting note
Light ruby red color and subtle scent of wild strawberry, cherry, cedar wood and cloves. Soft and sultry taste with jammy fruit, fine tannin and mild acidity. The aftertaste is long with nuances of pepper and laurel.
