Description
Domaine de Panisse is the recently purchased winery of Marilou and Axel Vacheron, 4th generation winemakers of the famous Châteauneuf-du-Pape domaine Clos de Caillou. The enormous experience of Caillou's winemaker, Bruno Gaspard, is in their baggage, but Marilou and Axel see it as a challenge to put their own stamp on this small, beautiful winery located less than a kilometer from Caillou. The planted Grenache, Syrah, Mourvèdre and Cinsaut grapes are organically grown and harvested with a very low yield in the vineyard, so that the wines have maximum terroir expression. For the Côtes du Rhône le Mazet this is only 30 hectoliters per hectare. After the manual picking of the Syrah (60%) and Greanche (40%) grapes, complete destemming and fermentation follows in concrete vats. The wine then matures for 14 months in large wooden barrels, not intended for oak scent and taste but for a gradual development of aromas and tannins. The result is a particularly beautiful red wine that far exceeds its designation of origin.
Drink with
Sun-baked, southern French red wine to drink on its own or combine with spicy dishes. Delicious with mild stews with chicken or turkey, hash or gratinated bean dish.
Tasting note
Characterful red wine with a sultry scent of cherry, plum, fig, thyme and juniper berry. The taste is full and juicy with balanced acidity and mild tannins. Notes of toast and Provencal herbs in the final.
