Description
Gigondas. That is what it is all about at Domaine la Bouïssière. It makes sense, because brothers Thierry and Gilles Faravel own perhaps the most beautiful and breathtaking vineyards of the appellation. They are located at the foot of the small but rugged (and indeed tooth-shaped) mountain range Dentelles de Montmirail, at an altitude of no less than 300 to 500 meters. The rugged terrain is so steep that some of the vineyards are even laid out in terraces.
It provides a unique terroir for equally unique wines. The soil is actually a millennia-old seabed, pushed up during the formation of the Dentelles. The exposure of the vineyards is north-westerly, making it cooler here than in many other vineyards in the appellation. This ensures a balanced freshness in the wine. Finally, between the vines grows wild garrigue, which also puts its stamp on the spicy character of the Gigondas.
Of course, the wines do not owe their exceptional quality solely to the terroir. Gilles takes great care of the old vines. His method is organic, although the domain is not certified. The grapes (Grenache and Syrah) are carefully harvested by hand. Thierry is at the helm in the cellar. His method is classic and minimalist. What is special is that he often works with whole bunches instead of just destemmed grapes, which in his opinion creates more tension in the wine. The maturation takes place in used oak barrels.
The result is a stunning Gigondas, which is without a doubt one of the best in the region. It is full, concentrated and powerful, but the freshness, tension and juiciness ensure that the wine is never heavy or ponderous; the typical Bouïssière signature. A magnificent wine, with many years ahead of it.
Drinking at
Powerful, mouth-filling red wine to drink with grilled and stewed dishes. Beautiful with entrecote with grilled aubergine and courgette, spicy spareribs, or young, hard cheeses.
Tasting note
Purple-red wine with a refined scent of plum, blackberry, cherry, leather and clove. Sultry and rich in taste with jammy fruit, powerful tannin and balanced acidity. Enormous taste length with laurel and toast.

Drink from 3 years; can be kept for approximately 12 years after harvest.
