Description
Manu Venturi's red Le Bois du Cerf is a textbook example of good Corsican red wine. It is light in color, delicately scented with red fruit and spices and elegant, fresh-juicy and dry in taste.
It is the surprisingly cool temperature in the higher vineyards that makes it possible to produce wine with an almost northern finesse. Manu is also a passionate nature lover, ensures great biodiversity on his domain and almost naturally works organically and biodynamically.
The traditional Corsican grapes niellucciu, sciaccarellu and part syrah determine the character of the wine. The Italian influence on the island can be found in the nillucciu, which is related to the sangiovese and was planted by Italians in the distant past.
After the hand-picking, fermentation follows with the aid of wild yeasts in concrete vats. Manu then ages the wine in this for another twelve to eighteen months, after which it is not clarified and only slightly filtered. A signature Mediterranean island wine!

Drink at
Elegant, smooth red wine to drink as it is. Also fits nicely with French classics such as confit de canard, coq au vin or au gratin casseroles.
Tasting note
Light ruby red wine with an open scent of raspberry, cherry, cranberry, clove and bay leaf. Light-footed and wonderfully juicy with an invigorating freshness, fine tannins and a lingering aftertaste.
