Description

 

The white Le Bois du Cerf, made from 100% vermentinu (also known as vermentino and rolle), stands out positively in the growing range of wines from this Mediterranean grape. Depending on the terroir and the winemaker's method, there are considerable stylistic differences.

Producer and Corsican ambassador Manu Venturi makes a delicate, dry variant with tension and juiciness. His love for Corsican nature and biodiversity is almost self-evidently expressed in an organic certification and even biodynamic farming.



Manu harvests the top-quality grapes by hand in high-altitude vineyards with a low yield. Once in the cellar, he lets them ferment in concrete vats without adding yeast cultures. He lets the resulting wine mature on the lees for another six months, before bottling it unfined and only lightly filtered.

This minimalist approach produces a beautiful, pure white wine with maximum fruit and terroir expression. Delicious as an aperitif or to accompany fresh fish from the oven.
