Description
Florent Rouve makes wine in the Jura with inspiration from Burgundy. And you can taste that in this En Paradis. What an unprecedentedly beautiful, flawless and exceptionally tasty Chardonnay!
What distinguishes Rouves Jura's from many others is that he does not make his wines in the traditional, oxidative way. In this method, the wines mature in contact with oxygen, which gives them aromas and flavors of roasted nuts and crisp apples. François, on the other hand, makes them exactly as they do in Burgundy: pure, terroir-typed and with minimal intervention.
He harvests the grapes for this En Paradis in the plot of the same name with old vines planted on clay soils (marnes bleues). The relatively cool location ensures a lot of freshness and aromas in the grapes, which gives the final wine a strikingly beautiful tension and finesse.
After the manual harvest, Florent ferments the chardonnay grapes using the grape's own yeasts in oak barrels. The wine then matures on the yeasts for another sixteen months. Florent does not use bâtonnage to keep the wine as unprocessed as possible.
And he succeeded wonderfully. The cuvée En Paradis is crispy, pure and mineral, with an exciting freshness and at the same time a particularly seductive creamy character and luxurious oak touch. Anyone who drinks this beautiful wine can indeed effortlessly imagine themselves in paradise.

Drink with
Great with poached (freshwater) fish, but also with chicken with cream sauce.
Tasting note
Bright yellow in hue with a refined aroma of ripe apple, toast and oak. The full, round taste has a balanced structure and ends with a fragrant and fresh aftertaste.
