Description
Savagnin may not be well known internationally, but in the Jura it is an iconic white grape that produces great wines. It is also a very old grape, ancestor of Chenin Blanc, Sauvignon Blanc and Grüner Veltliner, among others. Characteristic are an aromatic character and fresh acids.

Florent Rouve turns it into a particularly beautiful, very pure white Jura. Where many winemakers here age their wines in contact with oxygen, which gives notes of burried apple and roasted nuts, Florent chooses to always top the barrels, so that more dosed contact with oxygen can occur.



Florent harvests the grapes by hand in the Les Sarres plot. The soil here consists of limestone and clay (marnes grises), a terroir on which savagnin thrives very well. After the harvest, the wine ferments using natural yeasts and matures for another fifteen months in used oak barrels.

This method ensures an extremely pure and refined white Jura, with pure fruit, a clear terroir expression and an intense, concentrated taste. Thanks to its fresh, salty character, Les Sarres goes particularly well with a plate of oysters, a platter of fruits de mer or a nice fish dish. But it is also very tasty, for example, with chicken from the oven with lemon. A beautiful Jura, with Burgundian finesse!

Nice with seafood or (cold) fish dishes.
 
Tasting note
Bright yellow in hue and finely scented with nuances of ripe citrus fruit, floral tones and light oak. The taste is strong and fresh in structure and ends with an aromatic and lingering aftertaste.

Ready to drink from 2 years after harvest, easy to keep for 4 to 5 years
