Gamay (Beaujolais, Mâcon, Loire, Savoie, South of France, rest of the world)
The full name is the Gamay Noir à Jus Blanc. Early flowering and early maturing variety. Light skin resulting in less color and little tannin. From light, full-fruited wines to strong crus. Vinification often takes place using maceration carbonique. Passe-Tout-Grains from Macon consists of 2/3 gamay and 1/3 pinot noir.
Recognizable aromas : red fruit (strawberry, raspberry, red cherry, elderberry, currant); black fruits (black cherry, blackberry), exotic fruits (banana); floral (roses, violets); ethereal (yogurt, dairy); sometimes wood (vanilla, cedar).
