With its fifty hectares of biodynamically cultivated vineyards near Lake Kaltern (Lago di Caldaro), wine producer Manincor is one of the absolute top of Alto Adige in Northern Italy. The region owes its reputation mainly to flawless white wines from one grape variety, but Manincor also makes very exciting blends in addition to monovarieties. Sophie is a special example of this.

Sophie is made from predominantly chardonnay, supplemented with a small percentage of viognier and sauvignon blanc, which gives the wine its unique character. Once the grapes have been pressed, a short soaking of the skins follows for more aroma and structure. After spontaneous fermentation in wooden barrels, the wine matures for several months on the yeasts. This creates structure and complexity. The result is an impressive white wine that is characterized by charm and refinement as well as strength and roundness.

To best express the richness and complexity of this characterful wine, we advise you to decant the wine and serve it in large Burgundy glasses.
