100% Chardonnay from La Fosse
Pure, intense, complex Champagne. The aroma of the wine is reminiscent of a beautiful white Burgundy: ripe citrus fruit, creaminess, slightly toasty and salty minerality. This Champagne is also very vinous and refined in taste. Intense, complex, round, rich and salty, with perfect balance and delicate mousse. Beautiful dry aftertaste that lasts for minutes.
Pascal Agrapart
Although Agrapart is neither organic nor biodynamically certified, the domain applies many of the principles from this corner. Pascal is convinced that the focus of the work on the estate should not be so much on the work in the cellar (where work is done as minimalist as possible), but on the work in the vineyards. After all, good quality wine comes from healthy grapes. This means that in this case pesticides are used, compost is used to promote soil life and the soil is regularly plowed by humans and horses.
The horse that has performed this task for years is Vénus. Although she has since passed away, she did give her name to the domain's prestige cuvée. The grapes for this champagne come exclusively from the La Fosse vineyard, which has always been worked by Vénus. The vineyard is located in grand cru Avize and planted in 1959. The soil consists of clay and lime layers. After harvest, the chardonnay ferments and matures in wooden barrels. After the second fermentation in the bottle, the Champagne rests on the yeasts for another five years. This treatment gives the Champagne an impressive balance between richness and finesse and enormous complexity. Because no sugar has been added after disgorgement (hence brut nature), the Vénus has a beautifully toasty, very mineral, even slightly smoky character.
Vénus, with its purity, complexity and elusive combination of lightness and weight, is undoubtedly one of the most beautiful Champagnes produced by the region. To fully appreciate this Burgundian style Champagne, we advise you to decant the wine carefully.
