If you like timeless, classic Burgundy, Bouard-Bonnefoy is the place to be. This small, traditional winery harvests such a beautiful quality of grapes that it has been able to supply Pierre-Yves Colin Morey, one of the absolute icons of Burgundy, for years.
In addition, the family makes a small amount of its own wines out of pure love for the profession. Initially these were only sold locally and to friends, so completely under the radar. After much insistence, we are one of the first export relations to offer a limited edition of their beautiful artisan Burgundies.
This beautiful Premier Cru is made from chardonnay grapes harvested in La Maltroie, in the middle of the village of Chassagne. The vineyard with more than thirty-year-old sticks is processed in a sustainable manner. Fabrice and his daughter Clara harvest by hand. Fermentation takes place using grape yeasts in small oak casks, followed by a maturation on the yeast residues of about a year for extra depth in taste.
The result is Chassagne as Chassagne is intended. Delicate and rich, with notes of ripe citrus fruit, toasted nuts and smokiness in the aroma and tension and concentration in the taste. This is a complex white wine with a lot of flavor length and wide culinary versatility. For example, combine it with lobster, turbot or a creamy dish with poultry or mushrooms.
