Palette Rosé one of the oldest Provence Appellations
Not far from Aix-en-Provence is one of the smallest (and oldest) provenance areas in France: Palette. The appellation – one of France's best-kept secrets – has only 43 hectares and therefore only five producers make wine there. The most famous is the historic Château Simone, but Stéphane Spitzglous of Château Henri Bonnaud is also making great progress!
Palette received its AOP award in 1948 because of the special limestone terroir. This distinguishes Palette from the rest of Provence. Stéphane knows this terroir like the back of his hand. He grew up with his grandfather, who managed the wine estate. In 1996 he was allowed to take over from his grandfather.
The enthusiastic Stéphane now farms his 14 hectares of vineyards organically. He considers vibrant soils and biodiversity as prerequisites for authentic wines. Stéphane harvests the Mourvèdre, Grenache and Cinsault for his rosé by hand, in small crates of a maximum of 15 kilos. This way, the grapes arrive in the cellar in the best possible condition.
To make the rosé, Stéphane drains some of the juice from the red wine. He then matures the rosé for eight months, 80% in stainless steel tanks and 20% in small French oak casks. This ensures that the wine is beautifully structured and smooth at the same time.
The end result is an extremely refined rosé with floral, fruity and salty notes. Strikingly elegant with an exquisite balance between freshness, ripe fruit tones and a richly varied, long aftertaste. Drink this gastronomic wine preferably at the table, for example with Provencal fish dishes.
