It is not always necessary to reinvent the wheel yourself. The young Sébastien Dampt understood this all too well. It is precisely with this approach that he is one of the new generation of winemakers who are putting Chablis back in the spotlight. Wine making is done here as in the olden days: traditional and unadorned. As simple as that approach may sound, the result is just as impressive.
The roots of the Dampt family go back 150 years in the winemaking history of Chablis, the northernmost part of Burgundy. For generations, the Dampts have specialized in the understated, chalk-dry and slender style Chardonnay that is so typical of the region. So Sébastien was spoon-fed the profession. After training in Beaune, he gained experience at home and abroad. In 2007 he started his own domain, now tried and tested.
Sébastien harvests the grapes for his Chablis Villages from different plots, the largest of which has no fewer than 45-year-old vines. The vinification is then minimalist: after pressing the grapes, the wine ferments and ages in stainless steel tanks. This not only ensures the refined, fully dry Chablis character, but also a light flint aroma as a sign of terroir expression in the wine.
This is Chablis the way Chablis is meant to be. Bone dry, chalky and with notes of granny smith apple and citrus fruits. Delicious as an aperitif, or with oysters and light fish dishes.
