Description
Txakoli, txakolina or chacolí is the white specialty of the Spanish Basque Country and the popular pouring wine in the tapas bars of San Sebastián and Bilbao. However, the wines from the best producers also penetrate the better gastronomy. Like this one from Doniene Gorrondona.
It is made from hand-picked hondarrabi zuri grapes in the Bakio sub-region, which ferment spontaneously. This small area with a lot of cooling influence from the ocean is known for wines with a beautiful balance between freshness and ripe flavor notes.
Good Txakoli can no longer be compared to the old style, slightly pungent, fresh-soured wine with little alcohol and ripeness. The juicy and beautifully scented Doniene Gorrondona matures for six to nine months 'on the lie' and can be characterized as a cross between a good, matured Muscadet and a juicy Albariño.
Serve it with fresh salads, grilled fish, mussels or as an exceptionally original aperitif.
