Description
The successful and innovative Apulia producer Cantine Due Palme makes a delicious fresh sparkling wine from the Negroamaro grape. This 'pride' of Apulia produces full, powerful red wines with a normal vinification, but due to an early harvest, a direct pressing and a fermentation without skins, Due Palme turns it into a white 'spumante'. Making white wine from red grapes is possible because it is not the flesh but the skin that contains the coloring agents for red wines.
The term extra dry is perhaps misleading and suggests that taste is extra dry. However, that is not true. The driest spumante variant is called 'brut', followed by 'extra dry' and 'dry', with the last being strangely the least dry.
