Description
The Burgundian tradition of making elegant, refined wines is clearly present in this Merlot. Laurent Delaunay, producer of exclusive white and red Burgundy, also looks for drinkability in his southern French wines.
He succeeds in this by harvesting grapes with a perfect balance between freshness and ripe notes. A matter of sufficiently limiting the yield in the vineyard and planting grapes in relatively cool places.
The expert vinification in this case is a mix of traditional fermentation and carbon dioxide soaking, the method widely used in Beaujolais. After assembly, part of the Merlot remains in oak casks for six to nine months.
The result is a remarkably accessible, smooth and drinkable merlot with a refined oak influence, which is very distinctive in the range.
