The Deconstructed series is the highly exclusive prestige project of British winemaker Richard Kershaw. He has set himself the goal of mapping the best vineyards of the small, cool region of Elgin, thus showing the area's potential for grand cru level wines.
So far he has succeeded wonderfully. This impressive and very limited wine is made from the syrah clone SH9C, which produces aromatic and delicate wines in cool climates. The so-called Cartref bottom consists of granite and quartz and gives the wine an intense fruitiness.
After the grapes have been carefully picked and sorted by hand, a spontaneous fermentation follows in the cellar and then a maturation of 17 months in French oak barrels, from coopers from Burgundy and the Rhone. The wine is bottled unfiltered.
This beautiful Syrah can easily compete with greats such as Cornas or Hermitage. Drink it preferably in combination with a hearty dish, such as grilled red meat or lamb. Nice to drink now, but can also be stored for another ten years.
