Thierry and his son Sébastien Redde are in the premier league of sauvignon winemakers in the Loire. They produce their wines on one of the best terroirs of Pouilly-Fumé. From the La Moynerie vineyard, Redde makes an excellent pure-bred Sauvignon.
This cuvée is regarded as the reference quality of the winery. The wine is made from grapes from vineyards on flint (silex) and calcareous clay soil.
Redde works in the cellar in a natural way, which means that he does not add yeast cultures or enzymes. After fermentation, the inactive 'wild' yeast cells remain in contact with the wine for a long time, which ensures an extra round and full taste. The result is a top quality Pouilly-Fumé that can ripen for a long time, depending on the style of the harvest.
