Description
If there's anyone who captures the essence of Loire red, it's Bertrand Sourdais, the owner and winemaker of the 1889 Chinon icon Domaine de Pallus. He proves that once again with this new cuvée: Cabernet Franc in the purest sense of the word.
Bertrand harvests the biodynamically grown grapes from his younger vines, planted on sandy and calcareous hills. After a short skin soaking, fermentation follows with the aid of natural yeasts present on the grape. Finally, Bertrand ages the wine for six months in used oak barrels.
The result is an exemplary Loire-Cabernet of the type that is particularly popular in the brasseries and bistros of Paris. What a wonderfully juicy, elegant Chinon, with notes of red fruit, laurel and a hint of cedar. The perfect wine to serve with steak frites or duck breast.
