Description
As befits a true Bourguignon, Laurent Delaunay also focuses on flexibility and drinkability in the southern French Languedoc. Take this wonderfully fruity, full, but also smooth Cabernet.
Laurent harvests some of the grapes in the foothills of the Cévennes and some in the Aude. Cabernet Sauvignon can ripen perfectly under the southern French sun. By selecting relatively cool vineyards, Laurent ensures sufficient freshness in the grapes. Finally, the low yields he uses provide a lot of flavor concentration.
Once in the cellar, Laurent destems the grapes. He lets the peels soak for quite some time before fermenting the juice. After fermentation, he ages a small part of the wine in oak barrels, the vast majority in stainless steel tanks.
This produces a wonderfully full-tasting, smooth red wine that immediately seduces with its pure fruit flavors of blueberry, plum and blackberry and a hint of toast. This Cabernet is smooth enough to drink solo, but is also a perfect candidate for an everyday meal.
