Description
As befits a true bourguignon, Laurent Delaunay also focuses on suppleness and drinkability in the southern French Languedoc. Take this wonderfully fruity, full, but also supple Cabernet.
Laurent harvests part of the grapes on the foothills of the Cevennes and part in the Aude. Under the southern French sun, the Cabernet Sauvignon can ripen perfectly. By selecting relatively cool vineyards, Laurent also ensures sufficient freshness in the grapes. Finally, the low yields he uses give a lot of flavour concentration.
Once in the cellar, Laurent destems the grapes. He lets the skins soak for a long time before fermenting the juice. After fermentation, he ages a small portion of the wine in oak barrels, the vast majority in stainless steel tanks.
This results in a deliciously full-bodied, supple red wine that immediately seduces with its pure fruit flavours of blueberry, plum and blackberry and a hint of toast. This Cabernet is supple enough to drink solo, but is also a perfect candidate for everyday meals.
