Lime, green fig and smoky saltiness
Fantastic wine with seafood
Becomes even more beautiful with a few years of bottle aging |
Description
Semillon is a special grape. It often produces wines that are a bit shy in their youth. But give them a few years of bottle ageing and you won't know what you'll experience! That also applies to this magnificent example from the widely respected South African winemaker David Nieuwoudt.
In addition to Cederberg, he owns vineyards in the cool, coastal Elim near Cape Agulhas. He bottles these wines under the name Ghost Corner, a reference to the many ships that have been wrecked off the coast here in the past.
David harvests his semillon grapes by hand. After crushing the grapes and a short maceration of the skins, fermentation follows, which takes place partly in oak barrels and partly in stainless steel tanks. The four-month maturation also takes place in a mix of (partly new) wooden barrels and stainless steel tanks.
The end result is a beautiful, terroir-driven Semillon. The youthful notes of lime and green fig are complemented by smokiness, toast and beeswax as the wine ages in the bottle. Characteristic are the focus, tension and mineral nuances. A great wine with a variety of dishes, from fish and shellfish to dishes with mushrooms and vegetables. Well worth the wait!
