Pasquale Clemente from Naples
Pasquale Clemente makes fascinating wines in the hinterland of Naples. The wine region around the town of Benevento benefits from cool and elevated vineyards with a volcanic subsoil. The wines of Masseria Frattasi are unique! This is due to the combination of terroir and the remarkable organically grown primal grapes such as greco fiano coda di volpe and aglianico.
The aglianico grape is common in southern Italy and makes for different styles of red wine depending on ripeness and vinification. Pasquale Clemente opts for an accessible style with the Caudium and only harvests the grapes in the first ten days of November! It is only after this long period of time that the skin of the grape reaches full maturity with tannin and many flavourings.
After the usual first and second fermentation, the Caudium matures for about nine months in French oak casks. Due to both its strength and freshness, this wine tastes delicious with grilled meat dishes, among other things.
