Vino Generoso
The Montilla-Moriles wine region is located north of the southern Spanish city of Malaga. The wine region has been known for centuries for the production of exceptionally high quality Pedro Ximénez grapes. This grape variety is used for the production of both dry and sweet Montilla. Even the Spanish government recognizes the special quality and allows the PX harvested in Montilla to be sold as the much better known DO Jerez-Sherry. The PX añada is made from grapes dried in the sun on mats. The concentration of the grape increases significantly and a very sweet dessert wine is made from it. After fermentation, a maturation of about 6 months follows in oak casks. Robert Parker: 94 points!
