definition
The amarone is made from dried grapes that are not fermented until January. Because the grapes contain a large concentration of flavoring sugars and acids, a very powerful alcohol-rich wine is created.
After fermentation, it matures for about twenty-four months in small oak casks and a further six months in the bottle before being sold. Overwhelming wine with an enormous concentration of flavour. Even Italians drink the wine without eating!
Valpolicella is a versatile wine region
Same wine region winemaker and same terroir and yet five completely different wines. That is the special thing about the Valpolicella area east of Lake Garda in northern Italy. The Accordini winemaking family - headed by the brothers Tiziano and Daniele - is the model for the classic quality wines of the region. By means of the traditional appassimento process of drying the grapes, they make the wines ripasso paxxo amarone and recioto.
