Xavier and Guillemette Besson own 85 hectares of vineyard around Givry, a quarter of which is chardonnay and three quarters of it is pinot noir. Since 1989, they no longer supply to the trade, but only produce from their own vineyards. The premier cru Les Bois Gauthiers is located on a steep slope facing south and southeast and therefore enjoys good natural drainage and a favorable location in relation to the first morning sun. The harvest is picked manually and gently crushed. The sophisticated vinification consists of a cool maceration for several days followed by fermentation to above 30 °C. The aging in 50% new oak barrels results in a spicy, characteristic red Burgundy with storage potential.
