Burgundy producer Badet Clement
For the owners and oenologists of Burgundy producer Badet Clement, it is a challenge to make a Burgundy clone in the south of France. Laurent Delaunay in particular is a specialist in finding vineyards that give a characteristic expression to the grape. For the Pontificis white she selected coolly located chardonnay vineyards and ripe viognier. After fermentation, classical maturation follows in small oak barrels where the batonnage, originally from Burgundy, is also used. This makes the wine taste full and creamy.
