Paulo Nunes from the Serra da Estrela region
One of Portugal's most classic wine regions has entered a new phase. Young winemakers have broken with the drying, ripe and somewhat old-fashioned style of the previous generation. They now make elegant, world-class wines on the Dão's characteristic granite soils. A good example is the small Casa da Passarella, where Paulo Nunes knows how to process indigenous grapes into quality wine in the Serra da Estrela subregion.
The A Descoberta white is made from Malvasia, Verdelho and Encruzado grapes that are chilled for several hours before fermentation. After this, the white dão ferments in steel tanks. Paulo Nunes then stirs the tank regularly so that the yeast cells come into optimal contact with the wine. This 'bâtonnage technique' provides a mild flavor nuance that complements the freshness of the encruzado grape in particular.
The Descoberta (find) is a wonderful introduction to the new generation of white dao wines; Made in a modern way, but retaining the unique terroir in this region and grape expression.
Iberian white competes!
Fortunately, the days of heavy, cumbersome white wines from Spain and Portugal are long behind us. The new generation of white wines is in full competition with other suppliers. But modern wine technology alone is not enough to make the distinction. The striking white dão from Casa da Passarella with its 100% autochthonous grape composition is of high quality.
