For example, in Martinborough, which is opposite Marlborough, but on the very southern tip of the North Island. The climate is comparable to Marlborough: little rain, lots of sun and a big difference between day and night temperatures.
Palliser Estate is one of the region's leading producers. At a time when mainly sheep grazed, this domain was one of the first to plant grapevines. Palliser now owns about 72 hectares, spread over seven vineyards. The winery is located on the Martinborough Terrace, which is considered one of the most beautiful terroirs in Martinborough.
The Palliser Estate Sauvignon Blanc is a complex and refined wine. The grapes come from three different vineyards. To preserve as much pure fruit expression as possible, the wine ferments and ages in steel tanks. The wine does stay with the lie for six months, for some extra structure and complexity. This makes it not only delicious to drink, but also very suitable for at the table.
