Mediterranean grape that is resistant to heat and drought. Wide variety of wines from rosé (Tavel en Provence) to light, to powerful red wines, fortified sweet wines. In general, the grape gives little color and tannin. The grape easily builds up sugars, which is why most wines have a high alcohol content.
Recognizable aromas : red fruit (strawberries, raspberry, red cherry); black fruits (black currant, blackberry, black cherry); dried fruits (plum, dates, fig, raisins, dried apricot, fruit jam); spices (pepper, bay leaf, cinnamon, licorice); herbs (thyme, rosemary, sage); roasted (coffee, cocoa, chocolate, smoked); wood (vanilla, oak, liquorice).
