Sauvignon Blanc has its distant origin in Southwest France. Together with the Semillon and Muscadelle, it forms the basis for white Bordeaux. Although it is an early-ripening grape variety, harvesting it too early can make it look harsh with aggressive, unripe acidity and an abundance of green pepper and cat piss aromas. The best specimens have a fresh, lively and juicy taste and often have an intense aroma that literally blows out of the glass.
Recognizable aromas : (green fruit (apple, kiwi, gooseberry); citrus (grapefruit, lemon, lime, orange); vegetables (asparagus, bell pepper); plants (grass, boxwood) herbs (mint, sage, parsley) animal (cat piss) In the New World and in warm years in cool regions often also exotic fruits (melon, pineapple, mango, peach).
