Tasting note
Full color, powerful, ripe with scent of apple, citrus and light oxidation tones. The taste is soft and round with a fine and persistent mousse; the aftertaste is dry and aromatic.
Description
For those who do not want to pay the grand prize but want to drink special bubbles, crémant is a perfect alternative to Champagne. This applies once again to the Bulles d'Argile of Denois.
This sparkling wine is made in the Limoux region, which traditionally has a reputation for Blanquette de Limoux, made with the local mauzac grape. Denois chooses to work exclusively with Champagne grapes pinot noir and chardonnay and therefore not to make Blanquette, but Crémant.
The grapes are planted on clay soils (argile) in higher vineyards at the foot of the Pyrenees. They are grown organically and harvested by hand. Prior to the second fermentation in the bottle, the base wine with the yeasts matures in used wooden barrels. Even after the second fermentation in the bottle, the wine matures on the yeasts for some time. Neither sugar nor sulphite is added for bottling.
It results in a pure, rich and round crémant, with the taste of ripe apples and pears, brioche and some toast. Drink it as an aperitif, but certainly also at the table, for example with lobster or aged cheese.
