Description
The best vineyards for making high-quality mousseux are usually located in relatively cool areas (Champagne, Crémant de Bourgogne), close to the sea (the best cava in Catalonia) or on higher slopes, such as in the southern French Limoux.
Here in the foothills of the Pyrenees lies Domaine Métairie d'Alon, specialising in the production of refined and organic Chardonnay and Pinot Noir. The challenge for owner Laurent Delaunay was to use these grapes to create a distinctive Méthode Traditionnelle, in the age-old tradition of this beautiful area.
However, the choice of these grapes specifically excludes the use of the Crémant de Limoux appellation. A small concession that Laurent had to make, because he considers the mandatory grapes Mauzac and Chenin as less suitable.
Due to the large difference in day and night temperatures, the grapes retain the necessary freshness. After manual picking, a first fermentation follows in large tanks, after which the wine is bottled. In the bottle, the second fermentation starts and the wine then matures on the yeast cells for about 24 months.
The long maturation gives the wine a great complexity and a very 'vinous' character that reminds us of the style of some famous Champagne producers such as Bollinger. The Embellie is beautiful as an aperitif, but also very suitable as an accompaniment to fish, poultry and fruits de mer. Serve the wine at a temperature of 4 to 8°C.
