Description

The Italians have given their own interpretation to the Californian specialty blush rosé. While the Americans usually make it from blue grapes and the skins are in contact with the juice for a very short time to make the lightest possible wine, the Italians do it exactly the other way around.

They do not use a blue grape but a white grape, namely Pinot Grigio. Because the skin of this grape turns slightly pink as it ripens, you can also make a light rosé from it in addition to white wine. The peels must then remain with the juice a little longer than in the case of a white wine.

This Blush from Cantina Cardèto is an excellent example! The grapes are harvested in vineyards with volcanic rocks (called matili). The grapes then ferment in stainless steel tanks at a low temperature to preserve as much juicy fruit as possible.

After a short maturation on the yeasts, the wine is bottled and you can enjoy a delicious light-colored rosé. With its juicy fruit and subtle sweetness, the Blush is perfect in spring and summer. Drink it as a drink or terrace wine, or with antipasti.
