Description
Good Cabernet Sauvignon almost always comes from a temperate climate zone or from higher vineyards in a warm wine region. The ripeness of the skin is very important: grapes harvested too early give the wine an unripe, hard taste.
Frenchman Sébastien Cabaret shows how it could be otherwise. Trained as an oenologist in France, he moved with European technical know-how to Chile, where he makes wine under almost paradisiacal conditions. Plenty of sun, ample availability of Andean meltwater in the vineyard and proximity to the cool ocean.
The Cabernet vineyards are located in the Central Valley and produce a modern, pure red wine with ripe, grape-typical aromas and mild tannins. The short contact with oak gives an extra seductiveness to the smell and taste. A fine example of New World viticulture with a European influence.
